COMPLETE INGREDIENTS LIST:
350g cooked sweet potato 
1/4 cup maple syrup 
1/4 cup coconut sugar
1/3 cup cocoa powder
1/4 cup coconut oil, melted
1 cup all purpose flour or half oat flour and half all purpose flour 
1/3 cup vegan chocolate chips
🔥HOW TO:
Preheat oven to 180°C and prepare a baking tray. Peel and dice the sweet potato into small cubes. Steam or cook for 15 to 20 minutes until soft and let it cool before mashing them up. In a food processor or blender mix the mashed up sweet potatoes, maple syrup, coconut sugar, melted coconut oil, flour and the cacao powder. Blend everything until you have a sticky brownie batter. Add in some dark chocolate chips into the dough and on top of it later on before going into the oven. Now just put the dough onto the baking sheet and let it bake for around 35 to 40 minutes. Spinach Artichoke Quesadillas! 📷 by @harvestcooked. (Always good to find a way to get leafy greens into every dish)
🚨🚨Recipe: Serves 2-4
1/2 teaspoon olive oil
1 garlic clove diced
6 ounces marinated artichoke hearts diced
3 cups baby spinach
4 ounces vegan cream cheese
2 tablespoons vegan mayonnaise
Salt and pepper to taste
Red pepper flakes (optional)
2 large flour tortillas

Preparation
Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute, stirring frequently. Add artichoke hearts and 2 cups of baby spinach. Stir to combine and cook until spinach begins to wilt.
Add cream cheese, mayo, salt, pepper and red pepper flakes to pan and stir to combine. Heat through and set aside.
Place a large non-stick pan on the stove over medium-high heat. Place 1 tortilla in the pan and fill with half of the spinach artichoke mixture and an additional 1/2 cup of baby spinach - making sure to keep mixture on one half of the tortilla.
Fold tortilla in half and cook until bottom begins to brown (approx. 2 minutes). Flip and cook until other side is browned as well. ​Recipe 
Smokey black bean + corn burger: In a food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burger patties. They shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of the patties with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes.)

Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add sprinkle red chili flakes. Serve with sweet potato fries and enjoy! ​.

Chickpea Frittata with Cauliflower by @yummyyatra 😋 Who'd love a slice or two? Get the full recipe below! ​_
Ingredients:
1 cup chickpea/garbanzo bean flour (sifted) 
1 cup grated cauliflower (steamed)
2 green onions (finely chopped)
1/4 teaspoon ground cayenne
1/2 cup fresh cilantro (finely chopped)
1/4 cup fresh dill (finely chopped)
1/4 cup walnuts (coarsely)
1 1/4 cup of water
2 teaspoon black salt (kala namak)
2 tablespoons of barberry (optional)
Salt and pepper to taste

Method:
🌱Preheat the oven to 350° F
🌱 In a large bowl, whisk the chickpea flour with the water to form a batter
🌱 Add all of the other ingredients (except the walnut & barberry, if you are using the barberry)
🌱 Pour the batter into a lined loaf pan, and top with the walnuts and barberry 🌱 Bake for 40-45 minutes
🌱 Remove carefully from the oven, and check with a toothpick if it is cooked. (You can do this by seeing if the toothpick comes out clean. If it is then it is cooked. If not, bake for an additional five minutes)
🌱 Let it cool for up to ten minutes and then transfer to a plate
🌱 Serve hot with some spicy sauce

🍫😍 Creamy Chocolate Pudding! 📷 by @vegaliciously 🚨🚨Recipe: • 5 dl coconut milk
• 2 dl water
• 70 g unrefined sugar
• a pinch of salt
• 45 g cacao powder
• 120 g dark chocolate
• 1 tsp agar agar

METHOD
1. Place milk, water, sugar and salt in a saucepan and heat over medium heat.
2. In a bowl, whisk cacao powder with 4 tbsp of water until lumps free then pour into the milk mixture and stir.
3. Add in the chocolate and stir until dissolved.
4. Place agar agar in a glas, add in 1 tbsp of water, stir and pour into the chocolate mixture.
5. Bring the mixture to a boil and boil for 1-2 minutes.
6. Pour the mixture into a mold, let it cool completely and let it rest in the fridge for 3-4 hours.
7. ENJOY!

Is there actually anyone out there who doesn’t love Turkish Delight? Literally my FAVOURITE dessert of all time, though not healthy at all buuuut Taadaaa, problem solved!! Ingredients
Soaking

200 g raw cashews
1 tsp salt
filtered water, for soaking

Base
2 tsp coconut oil, plus extra for greasing
60 g pecans
40 g shredded coconut
1 tsp vanilla bean paste
1 tbsp raw cacao powder
1 tsp rose water
1 tsp filtered water
1 tbsp pure maple syrup
4 pitted dates

Filling
80 g lemon juice
150 g coconut cream
100 g pure maple syrup
1 tsp agar agar powder
2 - 4 tsp rose water, to taste
1 tsp beetroot powder

Raspberry rose jelly
40 g lemon juice
200 g fresh raspberries, plus extra for decorating
2 tbsp pure maple syrup
1 ½ tsp agar agar powder
3 - 4 tsp rose water, to taste

Place  cashews in a bowl and add salt, cover with water and set aside to soak for 3-6 hours. The drain and rinse.
Grease and line a loose-based rectangular tart tin (34 x 13 cm) with baking paper and set aside.
Place melted coconut oil and all remaining base ingredients into a food processor and blend until smooth. Using damp hands, evenly press mixture into prepared tin. Place into refrigerator while preparing filling. Place drained cashews into food processor with all remaining filling ingredients and blend until smooth. Pour into a small saucepan and heat on low until heated through and agar agar is dissolved.
Pour filling over chilled base and tap on kitchen bench to remove any air bubbles. Cover and place into refrigerator while preparing jelly.
Place all jelly ingredients into a small saucepan on medium for 10 minutes until fruit has liquified and smooth. Pour jelly mixture over filling, then cover and place into refrigerator to set completely (approx. 2 hours). Give this easy peasy recipe a try 🌹Vegan Turkish Delight Cheesecake🌹🍰 Ingredients Soaking 200 g raw cashews 1 tsp salt filtered water, for soaking Base 2 tsp coconut oil, plus extra for greasing 60 g pecans 40 g shredded coconut 1 tsp vanilla bean paste 1 tbsp raw cacao powder 1 tsp rose water 1 tsp filtered water 1 tbsp pure maple syrup 4 pitted dates Filling 80 g lemon juice 150 g coconut cream 100 g pure maple syrup 1 tsp agar agar powder 2 - 4 tsp rose water, to taste 1 tsp beetroot powder Raspberry rose jelly 40 g lemon juice 200 g fresh raspberries, plus extra for decorating 2 tbsp pure maple syrup 1 ½ tsp agar agar powder 3 - 4 tsp rose water, to taste Place cashews in a bowl and add salt, cover with water and set aside to soak for 3-6 hours. The drain and rinse. Grease and line a loose-based rectangular tart tin (34 x 13 cm) with baking paper and set aside. Place melted coconut oil and all remaining base ingredients into a food processor and blend until smooth. Using damp hands, evenly press mixture into prepared tin. Place into refrigerator while preparing filling. Place drained cashews into food processor with all remaining filling ingredients and blend until smooth. Pour into a small saucepan and heat on low until heated through and agar agar is dissolved. Pour filling over chilled base and tap on kitchen bench to remove any air bubbles. Cover and place into refrigerator while preparing jelly. Place all jelly ingredients into a small saucepan on medium for 10 minutes until fruit has liquified and smooth. Pour jelly mixture over filling, then cover and place into refrigerator to set completely (approx. 2 hours).
