Bank holiday vibes coming through strongly today with this morning’s jumbo vanilla pancake. I love a jumbo pancake (or pancake pizza 🤷♀️) as it’s so quick to cook and it’s really satisfying. The only difficulty is flipping it over without splitting it down the middle… that takes a little bit of practice! Anyway, today’s pancake literally tasted like a Victoria sponge cake, only it was topped with my continued obsession - greek yoghurt, banana, raspberries, @seadfoods original sesame butter and a little bit of honey. Honestly, the @seadfoods original is so creamy, it makes the perfect drizzle 🤩. Deets as follows, for one jumbo pancake:
1/2 cup flour (I used spelt flour)
1 heaped tbsp vanilla protein powder (or ground almonds + vanilla essence)
1 tsp flaxseed
1/2 tsp baking powder
1 pinch salt
Approx 60-80ml milk
Coconut oil/butter for frying
Mix all the ingredients in a bowl, except for the milk, to form a thick batter, then little by little add the milk until the mixture is smooth and just about pourable. Heat the coconut oil in a non-stick frying pan, then pour in the entire mix. Cover the pan with a lid to help it fluff, and cook for 1-2 minutes. Once bubbles appear, it’s ready to flip. Carefully slide a large spatulate underneath the middle of the pancake and then in one quick (!) movement, flip it over. Cook for another minute or so, until golden on both sides, then top and serve ✨
this big bowl of oatmeal made my stomach especially happy😃 this morning 🌼because i topped it with @organictraditions chocolate coconut crunch probiotic sorghum cereal, which is a combination of ALL my fav superfoods (chia, cacao, nibs, shredded coconut, hemp seeds, cinnamon), and sorghum flakes with both pre AND probiotics (for a healthy gut). it's so tasty too👅🍪🥥
for the oats: last night, i poured some boiled water over 1/3 cup rolled oats in a jar and let them sit for a few minutes. then i mixed in 1 tb chia seeds, 1/4 tsp concentrated ashwagandha powder (an adaptogen that's good for balancing mood and stress levels), and 1 scoop of vanilla pea protein (@nuzest_usa ). i used minimal water, just enough so that it all mixed together, and then left the jar sealed in the fridge overnight. the oats became SUPA THICC as the chia expanded. in the morning, i mixed in some unsweetened vanilla oat milk to liquify the oats and add creaminess, and then topped the bowl with berries, the cereal mix, almond butter, banana, cacao nibs, and a few buckwheat groats💙

Pre swim teaching brekkie bowl eaten at a rather unsociable 6:30am on a Saturday morning 😭. Picking up a few extra shifts at work seemed like a good idea until the reality of the early starts sank in... Thankfully I managed quite an early night last night, so I’m hoping I’ll be fully alert for all 10 lessons today. I don’t think the kids I’m teaching will be all that happy otherwise 😂. Sleep is one of my priorities at the moment, although a good routine is much easier said than done. What are you up to today?

Safe to say I’m definitely a creature of habit 🙊. This morning I tucked into another cozy bowl of oats, as per. I must admit that I think tahini is my current favourite topping. It’s usually almond butter, but this past week tahini seems to have taken the spot light for me! It’s a spread made from ground sesame seeds and in my opinion (😜) is especially delicious when paired with honey or coconut!

Revived and ready to face the week with a big smile after a lovely weekend away ☺️. After a lovely few days away from London, it’s always nice to get back into routine. It’s straight back into full day of lectures for me, although luckily I managed to squeeze in a gorgeous morning taster class at the new @hotpodyoga Belgravia 🧘♀️. I’m now en route to uni with a large tupperware of chocolate overnight oats for breakfast, although i must admit I’m secretly wishing I was eating this dreamy bowl instead 🙈.
