I've been trying to find the best #glutenfree#vegan and refined #sugarfree chocolate chip recipe for months now!! I'm still not there yet, but these delicious crunchy-outside, chewy-inside almond flour tahini cookies sweetened with coconut sugar were pretty close. I'm looking to get that bumpy texture you usually get with a mix of white and brown sugar. So I guess the experimentation continues and I know hubby couldn't be happier about it, helping with all the leftovers 😂

Happy Friday! Pimento Potato Hash with Fried Egg — my new obsession is this creamy play on Pimento Cheese I made using Greek yogurt. Recipe below!
Hash is a mix of potatoes, onions, and peppers. You can cook directly in a cast iron skillet or bake the potatoes in the oven before!
Pimento Greek Yogurt Spread:
- 1 cup Greek yogurt
- 1 4 oz jar pimentos, liquid drained and chopped
- 1 small jalapeño finely chopped, seeds removed
- A little less than 1/4 tsp garlic powder
- Salt and pepper to taste

On this account, I’ll be sharing the meals I eat.. all in this blue bowl! 🥣✨
In this bowl:
Purple Potato (obsessed lately)
Sauté the onions and cauliflower, then add pre-cooked meat, seasonings, then arugula, then once the leaves have cooled down, the egg whites. Bake potato separately in over or cheat and “bake” it in the microwave (4-8 minutes, depending on size of potato).
Took about 10 minutes all together and ended up a delicious meal! 👩🏼🍳
