Some of you have asked about meals that don’t need to be reheated. I only have 2 or 3 meals that I would even consider eating cold and this is one of them. It’s better heated up but if that’s not an option for you then this would be a decent choice.  I’m not a huge fan of eating food cold so I microwave all of my meals. If you work somewhere that a microwave isn’t available I’d recommend looking into buying some kind of heating device. There are products on amazon similar to a lunch box that plugs into the wall and will heat up your meal that way. I would personally invest in one of those if I wasn’t able to microwave my food. They aren’t very expensive either, I think they are $50 if I remember correctly. ⁣

I love used buffalo sauce in different meals because it is practically just flavored vinegar so it doesn’t have many calories and packs a ton of flavor. In addition it is a liquid and when you cover your meats in liquid it makes them easier to reheat in the microwave which is especially important when prepping leaner meats. ⁣

Salad

* 	6 cups slightly packed chopped kale
* 	2 crisp sweet apples , cored and chopped* (I used gala apples)
* 	1 cup walnuts , lightly toasted and roughly chopped
* 	1/2 cup dried cranberries
* 	4 oz goat cheese , crumbled
Dressing

use sauce as a secret weapon 👊🏼 this may not be my prettiest meal, but i like to show you guys what a typical throw together meal looks like around here and how i keep healthy from getting boring. i buy 1 or 2 sauces at the grocery store and make 1 at home as well (usually my tahini mac sauce) to spice up meals. this takes a plate of veggies and protein to that next level so that you can really enjoy it and find more satisfaction in it! this week’s blend: broccolini, cauli rice, zucchini noodles, chickpeas, chicken, and @sietefoods queso. takes about 5 minutes, and it’s filling, full of nutrients, and flavorful. happy friday friends!!.

I've been trying to find the best #glutenfree #vegan and refined #sugarfree chocolate chip recipe for months now!! I'm still not there yet, but these delicious crunchy-outside, chewy-inside almond flour tahini cookies sweetened with coconut sugar were pretty close. I'm looking to get that bumpy texture you usually get with a mix of white and brown sugar. So I guess the experimentation continues and I know hubby couldn't be happier about it, helping with all the leftovers 😂

Happy Friday! Pimento Potato Hash with Fried Egg — my new obsession is this creamy play on Pimento Cheese I made using Greek yogurt. Recipe below!

Hash is a mix of potatoes, onions, and peppers. You can cook directly in a cast iron skillet or bake the potatoes in the oven before!

Pimento Greek Yogurt Spread:
- 1 cup Greek yogurt
- 1 4 oz jar pimentos, liquid drained and chopped
- 1 small jalapeño finely chopped, seeds removed
- A little less than 1/4 tsp garlic powder
- Salt and pepper to taste
Mix together in a bowl!.

My first #BaileysBlueBowl post!  As a nutritionist and personal trainer I know that #FoodMatters.  I’m a huge advocate for eating whole foods (preferably sustainably sourced!) and fueling the body with meals that are both delicious AND nutritious.  On this account, I’ll be sharing the meals I eat.. all in this blue bowl! 🥣✨

In this bowl:
Purple Potato (obsessed lately)
Ground Turkey
Cauliflower
Arugula
Egg Whites
Coconut Oil
Liquid Aminos
Black Pepper
Pink Salt

To make:
Sauté the onions and cauliflower, then add pre-cooked meat, seasonings, then arugula, then once the leaves have cooled down, the egg whites.  Bake potato separately in over or cheat and “bake” it in the microwave (4-8 minutes, depending on size of potato).
