Alright vegan followers, I have a big question for you. What was the ONE thing you thought you could NEVER live without before you went vegan?⁣ Fried Chicken? Cheese? Scrambled Eggs?

In the last week I’ve had SIX separate people say to me “I could never go vegan - I just couldn’t live without [animal product]” - truth be told, I imagine MOST of us said this before we went vegan. I definitely said this about cheese many moons ago! ⁣

My FAVE thing about vegan cooking is preparing meals which help people (including myself) realise that NO animal products are essential - we can live and even thrive without ANY OF THEM. ⁣

Avocado Tomato Bruschetta 😍 I love tomato bruschetta with lots of basil, garlic, onion & balsamic vinegar on crispy bread 😋🙏🏼 what’s even more delicious is adding avocado to the mix!

4 slices of homemade white bread (I followed the instructions for the white bread recipe in the Panasonic booklet)
 2 avocados
 Juice of 1 lemon
 250g mixed baby plum tomatoes, sliced in half
 1 garlic clove, crushed
 1 tbsp balsamic vinegar
 1/2 tbsp olive oil
 1/4 red onion, finely chopped
 A handful of fresh basil, roughly chopped
 salt & pepper to taste  Method: make the hard crust bread following the Panasonic bread maker instructions. Add the avocado flesh into a food processor along with the lemon juice and a pinch of salt & pepper. Blend until smooth and top with chilli flakes.
 Add the tomatoes to a mixing bowl along with the onion, garlic, vinegar, olive oil, basil and season with salt & pepper.
 Spread the avocado onto each slice of bread and top with the tomato mixture. Enjoy!

- gluten free pasta
- cashew butter dairy free sauce
- sautéed mushrooms in coconut oil

- zaatar seasoning + lemon

Glazed Salmon with,
Glaze=1 apricot, mustard + coconut oil
- crunchy green beans cooked in garlic + oil

Crispy Salmon Coconut Noodle soup
1/2 cup coconut cream, 1 1/4 cups water, 2 tsp turmeric, 1.5 tsp ginger, 1 tsp garlic powder, 1/2 tsp salt
boil all then reduce. Add rice and noodles and cook. Top with avocado, salmon, tomatoes, kale chips, mushrooms, cilantro, cabbage + scallions.

Sesame Asian Salmon with,
- tahini
- cucumber salad
drizzled with lemon, sesame + mustard seeds
