(for 6 servings)
2 cups spinach, 14 calories (60 g)
1 roma tomato, 11 calories
2 cups egg white, 250 calories (480 mL)
salt, to taste, 0 calories
½ teaspoon pepper, 0 calories

Preparation
Preheat the oven to 350˚F (180˚C).
Lightly grease a muffin tin.
Then divide equally the spinach across 6 cups.
Dice the tomato, then fill the cups with the tomato and egg whites.
Season with salt and pepper.
Bake for 15 minutes, or until the whites have set.
Serve hot.

One Pot Chicken Fajita Pasta 🍝💪 -
Ingredients
(for 4 servings)
3 tablespoons oil
3 chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
5 cups milk (1 ¼ L)
4 cups penne pasta (400 g)
1 cup pepper jack cheese, shredded (100 g)

Preparation
Heat oil in a large pot over high heat
Add chicken and cook until no pink is visible, about 5-6 minutes, then take the chicken out.
Add the bell peppers and onion, cooking until the onion is translucent, about 6 minutes.
Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated, about 30 seconds.
Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
Cook for about 20 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
Add the cheese and mix until melted.

2 cups asparagus, cut into 1 1/2-in/38-mm pieces (250 g)
10 oz cherry tomatoes, halved (285 g)
⅔ cup pesto (150 g)
2 cups whole wheat penne, measured dry (200 g)
parsley, for garnish

Preparation
Heat the oil in a large nonstick skillet. Toss in the asparagus, season with a bit of salt, and sautée until the begin to soften, about 3 minutes.
Pour on the pesto, pasta, and chicken and stir to combine.
Toss in the cherry tomatoes and give everything a stir to combine and warm through.
Distribute pasta mixture evenly between 4 tupperware containers.
Top with parsley for garnish.
Can be refrigerated up to 4 days.

2 cups broccoli floret (300 g)
2 cups yellow squash, quartered (250 g)
2 cups cherry tomato (400 g)
½ cup pesto (115 g)
1 cup shredded mozzarella cheese, optional (100 g)
fresh basil, to serve

Preheat oven to 350˚F (180˚C).
Combine pasta, broccoli, yellow squash, cherry tomatoes, and pesto in freezer and oven safe baking tray.
Sprinkle mozzarella cheese on top (optional).
If freezing, cover baking tray with heavy duty foil or thick plastic wrap and store in the freezer for up to 3 months. When ready to enjoy, remove from freezer and let thaw.

Meal Prep Chicken Burrito Bowls 🍗

Ingredients
(for 4 servings)
2 large, boneless, skinless chicken breasts, cubed
15 oz black beans, 1 can, drained and rinsed (390 g)
1 white onion, diced
2 cloves garlic
16 oz medium chunky salsa, 1 jar (455 g)
1 cup brown rice, cooked (200 g)
1 tablespoon olive oil
1 bundle green onion, sliced, for garnish
salt, to taste
black pepper, to taste

Preparation
Heat the oil in a large skillet over medium-high heat.
Toss in the onion with a pinch of salt and sauté until the onions have softened, about 3 minutes.
Move the onions to the sides of the pan to create an open space in the middle. Add the cubed chicken into the center of the pan, season with salt and pepper, and sauté until the chicken has cooked almost all the way through.
Add the garlic and mix until fragrant, about 30 seconds.
Pour over salsa, black beans, and rice, and mix until everything in the pan is evenly combined.
Let the mixture simmer for 5 minutes or until the chicken is cooked through.
Divide the mixture equally into 4-6 bowls and sprinkle over some thinly sliced green onions.
Enjoy!.

⅓ cup greek yogurt (95 g)	
2 tablespoons olive oil	
1 tablespoon red wine vinegar	
1 tablespoon lemon juice	
2 tablespoons water	
1 clove garlic, minced	
1 tablespoon fresh dill	
salt, to taste, pepper, to taste	
TOPPINGS	
1 head romaine lettuce	
½ cup cucumber, sliced and halved (65 g)	
½ cup olive, halved (90 g)	
½ cup red onion, thinly sliced (75 g)	
½ cup cherry tomato, halved (100 g)	
½ cup feta cheese, crumbled (75 g) 
Preparation	
Preheat oven to 400°F (200°C). Place chicken breast on a baking sheet lined with aluminum foil or parchment paper. 
Top with olive oil, lemon juice, garlic, dill, and salt and pepper to season. 
Bake for 35-40 minutes until internal temperature reaches 165°F (75°C) and the juices run clear.	
Add all dressing ingredients in a small bowl or cup and whisk until with a fork until combined.	
Slice thinly or cube chicken, cutting to your preference for topping the salad.

疲れすぎてる今週。
今日は金曜日だっけ、って5回くらい思った。
帰りも遅めだったので簡単に。
昨日のおでんに具を足しておいて
#2日目おでん 。

#豚の生姜焼き だとパッケージに書いてあった
加工品を会社でもらったので、
それに野菜をたして卵でとじて。
あとは
◎大根の皮とあらめの煮物
◎茶碗蒸し
◎大根とにんじんのぬか漬け
.
完全にやる気ないなこれは
と自分でも思っていたら
食後に #バスクチーズケーキ を焼き始めてしまった。
今、すでにオーブンで焼けるいい香り。
今日は冷蔵庫で寝かせて、
食べられるのは明日だけどこの香りだけで充分癒し。

夜にお菓子を焼き始めるなんて
やっぱりストレスがたまっていたのかも。
そういえば、顔の吹き出物もすごい。

あ、食卓のカレンダーも変わってなかった。笑
